What I’m eyeing, buying, trying, frying, and styling this week!

EYING: Chicken coops! I convinced Chris we should invest in land so I could get some chickens and grow more of our food.

BUYING: I just ordered this white slipcover sofa on huge sale for an upcoming renovation. It looks just like the Ava Slipcover sofa I had in our last house but at a lower price. I will report back on quality when it comes in 7-8 weeks!

TRYING: I saw someone say that vacuum sealing your fresh herbs and berries in a mason jar using this device will help them last at least 2-3 times as long in the fridge. I use so many herbs, so I’m giving it a go and will report back.

FRYING: I made pulled chicken in the crock pot with salsa and added this cilantro lime dressing that has protein from the cottage cheese. We are serving it over beans right now instead of rice because Mac and Chris are still eating pretty low carb. For the dressing, combine:

  • 2 cups fresh cilantro
  • 1-2 garlic cloves (AMAZON LINK)
  • ¼ cup fresh lime juice
  • ½ teaspoon sea salt (AMAZON LINK)
  • ½ cup extra-virgin olive oil (LINK)
  • 1 whole ripe avocado
  • ½ cup whole milk cottage cheese

Thin with water to your preferred consistency.

STYLING: On necks, shoulders, and hips: silk scarves were on all the fashionistas at LTKCon. Both of these options fit at the waist (option 1, option 2). Option 2 is large enough that I wore it as a top (see here) as well.
