What I’m eyeing, buying, trying, frying, and styling this week!

EYING

I have been eying land! I’ve been dreaming of being more self-sustaining, but living so close to the beach and inside an HOA, we have a small yard and have rules about what we can grow and certainly cannot have chickens. So we will see! I’m not sure if this is the right season…so doing a lot of praying on it!! I’d love to find someone to help maintain the land alongside me.

BUYING

I am bringing darker browns into my wardrobe to start transitioning to some fall feels (despite the hot temps here in FL). I ordered these shoes this week and can’t wait to style them with cropped jeans.

TRYING

I have been trying this new coffee the last two months that is supposed to be less jittery and offer some additional health benefits with ingredients like Lion’s Mane mushrooms in it. I first tried it hot and hated it! Then my friend suggested mixing it with water, 5 drops of stevia, and some salt OVER LOTS OF ICE and it’s amazing! I haven’t had hot coffee in about 2 months! I am not sure I can go back to the jittery buzz of coffee after the switch, but I’m also not sure I’ll want iced coffee once the mornings are cooler. If you’re looking for a new drink, this one is good!

BTW, if you don’t use stainless steel straws, I use several a day and throw them in the dishwasher. I only use them with liquids (nothing semi solid like a smoothie).

FRYING

My mint has not been thriving recently, so instead of the Jennifer Aniston salad this weekend I made this Mediterranean inspired cucumber salad. It’s not something you need to measure in my opinion. I used 5 mini cucumbers, ⅔ of a can of chickpeas, ¼ of a medium red onion, ½ jar of kalamata olives and added about ½ cup of whole milk plain Greek yogurt, 1.5 tablespoons of red wine vinegar, dill, oregano, and garlic salt to taste. STIR ALL TOGETHER, so easy! It’s best if you can let it sit in the fridge for a bit after prep.

Would be good with chicken or sausage on top!

STYLING

I have always loved the Collier Dress, but it fit more like a shirt than a dress on me! It was so short. I recently found this dress on sale that looks so similar and has a more modest length! I wore it to an evening school event this week.
