My Jennifer Aniston Salad Obsesession 

If you’ve been on my social media lately, chances are you’ve heard me mention the Jennifer Aniston Salad. It’s a refreshing, fiber filled bowl that’s as simple as it is satisfying. Rumor has it this was Jen’s go-to on the set of Friends, and whether or not that’s true, I can confirm it’s become a regular in my kitchen.

What I love most about this salad is that it stores better than most salads. It’s full of fresh ingredients, easy to prep ahead, and versatile enough to enjoy in a few different ways depending on your mood (or what’s in your fridge). 


What’s in the Jennifer Aniston Salad?

Here’s the base version that’s been floating around:

Ingredients:

  • 1 cup cooked quinoa (optional – I usually leave this out!)
  • 1 can chickpeas, rinsed and drained
  • 1/2 cup chopped cucumbers
  • 1/2 cup chopped parsley
  • 1/3 cup chopped red onion
  • 1/3 cup chopped mint
  • 1/2 cup crumbled feta cheese
  • Juice of 1 lemon
  • A drizzle of olive oil
  • Salt and pepper to taste

I skip the quinoa most times for a lighter, lower-carb version, and I promise it’s just as tasty! I also typically add the entire portion of herbs that arrives from the grocery store. I LOVE fresh herbs. 

How I Make It a Meal

This salad is great on its own, but here are a couple of my favorite ways to switch things up:

1. As a Bruschetta on Rice Cakes
This has been my go-to lunch lately! I spoon the salad (sans quinoa) onto lightly salted rice cakes. It’s fresh, quick, crunchy, and perfect for when you’re craving something light but flavorful.

2. With Organic Spinach & Feta Chicken Sausage
For dinner, I’ll toss in some organic chicken sausage (I love the spinach and feta kind!) to add a little more protein and make it feel like a heartier, one-bowl meal. It’s an easy upgrade that still keeps things healthy and clean.


Meal Prep Tip

To make it feel fresh, wait to add the pistachios until the time of serving so they stay crunchy!
